Whole wheat bread, 2 slices
Spinach, 2 handfuls, finely chopped
Cheese, 1 cube (Optionally can use 1-2 tbsp grated cheese)
Olive oil, 1 tsp
Sweet Corn, 2 tbsp
Chilli flakes, to taste
Salt, to taste
Add olive oil or vegetable oil in a pan.
Add the chopped spinach and corn. Sauté until soft.
Add salt and chilli flakes as desired and mix well.
Allow it to cool.
Spread the spinach and corn mixture generously on a slice of bread.
Add grated cheese on top. Cover it with another slice of bread.
Serve with a side of salad.
This tastes great with sweet corn. But if you don't have it, you can make this without it.
