Easy Tofu & Capsicum Stir-Fry

  • Firm Tofu, 200g

  • Green Capsicum, 1 large

  • Onion, 1 medium

  • Garlic, 2-3 cloves

  • Oil, 1 tsp

  • Chilli Flakes, 1 tbsp

  • Mixed Herbs or Orgegano Seasoning, 1 tbsp

  • Salt, to taste

  • Cut onions and capsicum into thin slices.

  • Add oil, chopped garlic in a pan. Allow the garlic to cook slowly without burning for 30 seconds.

  • Add onion and capsicum and cook until soft. You can sprinkle water at this point to avoid the vegetables from burning or sticking to the bottom.

  • Once they are slightly cooked, add salt and other seasoning.

  • Add cubed tofu and mix well. Keep on low heat for 1 to 2 minutes.

  • Turn off the heat and serve with rotis or make them into rolls.
