Easy Veg Sandwich

Time taken: 15 minutes

Ingredients

  1. Whole Wheat Bread, 2 slices

  2. Cabbage, shredded, 1/2 cup

  3. Carrots, grated, 1/2 cup

  4. Capsicum, julienned, 1/2 cup

  5. Onion, grated, 1/2 cup

  6. Hung curd or Greek Yogurt, 1/2 cup (Can substitute with 1-2 tbsp Mayo if you don't have hung curd or Greek Yogurt)

  7. Salt, to taste

  8. Ground pepper, to taste



Method

  1. Mix all the veggies together with the hung curd/Greek yogurt.

  2. Add salt and pepper and combine.

  3. Add this mix between 2 slices of bread.

  4. Cut into rectangles and serve with a side of grilled chicken or paneer or tofu to make it a complete meal.


Tip: If you don't have hung curd or Greek Yogurt in stock, you can replace it with fresh cream.

This can be easily turned into a vegan recipe with either vegan mayo or vegan curd.
