Whole Wheat Bread, 2 slices
Cabbage, shredded, 1/2 cup
Carrots, grated, 1/2 cup
Capsicum, julienned, 1/2 cup
Onion, grated, 1/2 cup
Hung curd or Greek Yogurt, 1/2 cup (Can substitute with 1-2 tbsp Mayo if you don't have hung curd or Greek Yogurt)
Salt, to taste
Ground pepper, to taste
Mix all the veggies together with the hung curd/Greek yogurt.
Add salt and pepper and combine.
Add this mix between 2 slices of bread.
Cut into rectangles and serve with a side of grilled chicken or paneer or tofu to make it a complete meal.
Tip: If you don't have hung curd or Greek Yogurt in stock, you can replace it with fresh cream.
This can be easily turned into a vegan recipe with either vegan mayo or vegan curd.
