Easy Vegetable Khichdi


  1. Rice, 1 cup

  2. Dal, 0.5 cup

  3. Onion, 2 medium, finely chopped

  4. Garlic, 3 cloves, minced

  5. Tomato, 1 medium, finely chopped

  6. Green Peas, 0.25 cup

  7. Carrot, 0.25 cup, finely chopped

  8. Capsicum, 0.25 cup, finely chopped

  9. Green chillies, 2-3, finely chopped

  10. Cumin, 1 tsp

  11. Ghee or oil, 1 tsp

  12. Salt, for taste


  1. Wash the rice and dal twice over. Drain and keep it aside.

  2. In a pressure cooker, add ghee/oil. When hot, add cumin.

  3. Add garlic, sauté it for a minute. Add green chillies and onions. Once onions turn translucent, add tomatoes.

  4. Add the vegetables and mix well. Sauté for 1-2 minutes.

  5. Stir the rice and dal into the cooker. Add 2-2.5 cups of water. Add salt.

  6. Allow it cook for 1 whistle or 5 minutes.

  7. Serve it hot with a side of pickle, raita and a green salad.
