Quick and Easy Aloo Palak

Busy weeknights and reaching for your phone to order food? This recipe comes together in 15 minutes and is loaded with fiber and iron. Potatoes are a great source of complex carbohydrates that help you feel satiated for longer.


  1. Potatoes, Medium, 4

  2. Spinach, 2 bunches

  3. Cumin seeds, ½ teaspoon

  4. Red chilly powder, 1 tsp

  5. Vegetable oil, 1 tbsp


  1. Cut potatoes into small wedges.

  2. Take a pan and add 1 tbsp oil.

  3. When hot add cumin seeds. Once it splutters, add the washed and cut potatoes without any water.

  4. Add salt and roast potatoes to a golden brown.

  5. Once done add washed and cut spinach.

  6. Add red chilli powder, mix and cook for 5 minutes.

  7. Adjust the salt, if needed.

Tip: You can parboil the potatoes beforehand to reduce the cooking time.

Tastes great with Roti and rice
