Busy weeknights and reaching for your phone to order food? This recipe comes together in 15 minutes and is loaded with fiber and iron. Potatoes are a great source of complex carbohydrates that help you feel satiated for longer.
Ingredients
Potatoes, Medium, 4
Spinach, 2 bunches
Cumin seeds, ½ teaspoon
Red chilly powder, 1 tsp
Vegetable oil, 1 tbsp
Method
Cut potatoes into small wedges.
Take a pan and add 1 tbsp oil.
When hot add cumin seeds. Once it splutters, add the washed and cut potatoes without any water.
Add salt and roast potatoes to a golden brown.
Once done add washed and cut spinach.
Add red chilli powder, mix and cook for 5 minutes.
Adjust the salt, if needed.
Tip: You can parboil the potatoes beforehand to reduce the cooking time.
