Summer Quinoa Salad

Try this quick and easy summer Quinoa Salad that a client of mine shared with me. The best part is that this comes together in minutes and is very meal prep friendly. If you are struggling to get your fiber intake up, then this can provide upto 50% of your daily fiber intake.

Ingredients
  • Quinoa, cooked, 100g

  • Chickpeas, boiled, 100g

  • Cucumber, chopped, 1 medium

  • Carrot, grated or very finely chopped, 1 medium

  • Dried Cranberries, 2 tbsp

  • Jalapeños, 1 tbsp, optional

  • Coriander, finely chopped, 1 tbsp

  • Mint leaves, finely chopped, 1 tbsp

  • Red Chilli Flakes, 1 tsp

  • Salt, 1 tsp

  • Olive oil, 1 tsp

Method
  1. Mix all the ingredients except the olive oil in a salad bowl.

  2. Drizzle the oil on the salad.

Tip:
  • Refrigerate the cooked quinoa and chickpeas for a few hours to enjoy as a cold salad.

  • Can be made with black beans or rajma too.

  • Can add vegetables like raw bell peppers to make it high in fiber.
