This delicious and easy-to-follow recipe for soya nuggets bhurji is a vegan and protein-packed alternative to scrambled eggs. Made with soya nuggets and spices, this dish is perfect for a quick breakfast or lunch.
Ingredients
Serves: 2
Cooking Time: 25 minutes
Soya Nuggets, 2 cups
Any vegetable oil, 2 tsp
Onion, Medium, 2
Tomatoes, Medium, 2
Garlic, 4 cloves
Peas, shelled, 1 cup
Green chillies, 4
Eggs, 2 (Can skip if you don't eat eggs)
Coriander leaves, finely chopped, 1 tbsp
Method
Soak soya nuggets for 20 minutes in hot water.
Chop onions, tomatoes, chillies, garlic and coriander finely.
Add two tablespoons of oil in a pan. Then add onion, garlic chillies and tomatoes and sauté for 5 to 6 minutes on medium flame.
Add peas in the same pan and cook them till done.
Drain out the water from the soaked nuggets, rinse again with fresh water and squeeze dry.
Mince the nuggets in a blender (for best results) or roughly chop if mixer not available and add to the pan.
Beat 2 eggs and add to the pan.
Mix well and cook for 5 to 8 minutes.
Add red chilly powder and garam masala for a spicy touch (Optional).
Garnish with coriander leaves.
